Kimchi-Chesse Sandwich

Linnea, a baker from Stockholm I worked with introduced me to this sandwich. She made it after a big production for the whole crew with fresh slices of sourdough bread and it was just the best thing I had eaten in a long time. Since then, I make it at least once a week. I usually have all ingredients at home. It is easy, quick and satisfies the biggest cravings. Try and dip it in mayonnaise and you will be in heaven.

ingredients

2 slices of your favourite bread (I use a light sourdough bread)

some Kimchi

2 slices of cheese, I like Edamer or Tilsiter but any cheese you like that melts is fine

steps

Place one slice of bread in a heavy pan, add a layer of cheese then some Kimchi and another layer of cheese. Place a little plate or cutting board (not a plastic one) on top and add a weight on top. I like to use my tea pot. Heat at medium heat for 2-3 minutes, then turn the bread upside down, add the weight again and cook for another 2 minutes.

Serve crispy and hot with some mayonnaise or/and sriracha sauce if you like.
